These red velvet cookies are light and soft with a fluffy cream cheese center making for a perfect treat for the Holidays! These are very similar to my red velvet cookie recipes but these have a center filled with a surprise. This batch makes 6 medium size cookies.
**TIPS: The cream cheese need to set and freeze for at least 20 for the perfect texture of the cookies. The ball of cream cheese should be firm to the touch making for a solid hard ball.

Ingredients
Cookie Dough
1 stick of butter
1 large egg
3/4 cups of sugar
1 teaspoon of red food coloring
2 table spoons of vanilla extract
1/12 cups all purpose flour
1/2 teaspoon baking soda
1 pinch of salt
Filling
1 box of cream cheese
1 cup of powder sugar
1 table spoon vanilla extract
1 tablespoon flour
1 pinch of salt
STEP 1
Using a mixer mix the cream cheese along with all the filling ingredients.
Mix until combined however do not over mix the mixture or the cream cheese will liquefy.
STEP 2
Once the cream cheese mixture is fully combined, transfer mixture to a piping bag and pipe small circle to a baking tray.
Now freeze the piped ball in the freezer for 30 minuets or until they are firm to the touch.
STEP 3
In a separate bowl,cream together sugar and butter mixing on a low speed.
STEP 4
Add vanilla extract and the egg to the mixture mixing slowly. Add in the food coloring and mix until the color had fully combined and turned the mixture red.
STEP 5
Preheat oven to 350!
Now in a separate bowl add all your dry ingredients. Mixing slowly for easy control.
STEP 6
Once all ingredients are incorporated , next we will add our frozen cream cheese balls.
STEP 7
Scoop 1 1inch ball of dough, and flatten down to a patty size.
Next add the cream cheese ball to the center of flatten dough.
Then scoop another 1 inch dough ball and add dough to the top and roll until the dough is one big ball were the cream cheese is hidden in the middle.
STEP 8
Bake for 10 - 12 minutes.
If you notice the dough is still wet in the middle bake for an additional 3 minuets or until the dough is fully cooked.
STEP 9
Now this step is optional, melt 1/2 cups of white chocolate and drizzle on top of each cookies.
