These are my mothers favorite cookies. They have a soft and chewy center.
Soft but chewy!
Tips: For the perfect cookie let your eggs and butter come to room temperature.
Brown butter: Browning your butter add a flavorful taste to your cookies bring out a nutty and caramelized aroma.
Ingredients
1 cup of unsalted butter
2 1/4 cups of all purpose flour
1 table spoon cornstarch
1 pinch of salt
1 teaspoon baking soda
1 cup packed brown sugar
1/4 cup of pure cane sugar
1 large egg
1 egg yolk
2 table spoons of vanilla extract
2 cups of chocolate chips
STEP 1
Heat the butter in a saucepan on low heat until butter is melted and color has darkened. Once butter has melted and darkened set aside to chill for 10 minuets.
STEP 2
In a large bowl mix flour, cornstarch, baking soda and salt together.
STEP 3
In a separate bowl beat butter and both sugar until fluffy. Add in the egg, egg yolk and vanilla beat well.
STEP 4
Combine flour mixture with egg mixture mix until combined. Mix in chocolate chips.
STEP 5
Refrigerate for 15 minuets!
STEP 6
Preheat oven to 350
Using a cookie scooper scoop even 1in cookies on baking sheet. Bake for 10 minuets or until golden brown.
STEP 7
Once cookies are out of the oven set aside to cool for 5 minuets. Then place on a cooling rack to cool for 15 minutes for remainder of time.
