Blueberry Cheesecake Cinnamon Rolls w/ Lemon Glaze

These cinnamon rolls are not for those on a diet, flavored filled with hints on lemony berry filling with a creamy glaze on top.


Blueberry Glazed Cinnamon Rolls are a fun twist on the classic rolls that are filled with wonderful flavor, a sweet but tart treat.


Ingredients

Dough

  • 1/4 cups of active yeast

  • 1/2 cups of warm water

  • 1/2 cups scaled milk

  • 1/4 cups of sugar

  • 1/3 cups of shorting or butter

  • 1 pinch of salt

  • 1 egg

  • 4 cups of all purpose bleached flour

Filling

  • 2 8oz package of cream cheese

  • 1 1/2 cups of blue berries

  • 1/2 cups of powdered sugar

  • 1 teaspoon of fresh lemon juice

  • 1 teaspoon vanilla extract

Glaze

  • 2 1/4 cups of powdered sugar

  • 1 table spoon of vanilla extract

  • 1/4 cups of milk

  • 1 zest of a lemon

  • 2 table spoons of freshly squeezed lemon juice


STEP 1

Prepare your dough mixture, in a small bowl dissolve yeast with the warm water and set aside.

In a separate bowl; mix milk, sugar melted butter salt and egg. Then add your yeast to the mixture adding your flour 1cup at a time into the mixer until the dough has formed.

Once dough has started to combine, take the dough out of the mixer and begin to knead the dough on a lightly floured surface for 8 minutes.

Place dough ball in a well greased bowl and cover, sit aside to double in size for a hour!


STEP 2

Filling

Now that your dough has doubled in size, punch the dough ball down and roll the dough using a rolling pin on a floured surface into a rectangle or 15 by 9 inches.

Preheat oven to 350

Smash the blueberries in a large bowl to preferred consistency. Now mix together soften cream cheese, vanilla extract, lemon juice, smashed blue berries and powdered sugar. Spread the mix across the dough.


STEP 3

Now roll your cinnamon rolls into a log, but be careful as the blue berries might try to escape!

Once rolled cut each roll into even sizes as this dough make between 10 - 12 cinnamon rolls.


STEP 4

Once the rolls are cut place them in a baking pan or cast iron skillet to rise for an additional 40 or until doubled in size.


STEP 5

Bake your rolls for 35 minuets or until golden brown, set aside to cool.


STEP 6

Glaze

Now it's time for the best part, your glaze! Add your powdered sugar, vanilla, milk, lemon zest and juice to a bowl a mix until combined.

Now pour your glaze to the top of your cinnamon rolls
